Globally the most popular red variety is Cabernet Sauvignon yet until the vineyard expansion of the 1980s there was not enough grown to supply demand. Of course, till the 1950s Australians did not drink much table wine so a lack of plantings did not matter. The variety itself is not ancient and appeared in the Bordeaux region of France in the 17th century. Being a cross of Cabernet Franc and Sauvignon Blanc and surely the current popularity of Sauvignon Blanc tells us what genes mattered.
There were high quality Cabernets made in Australia in the 1960s, those of Chateau Reynella and Orlando come to mind, though it was Cabernet from Coonawarra that really captured the consumers attention. Good Cabernet is made across a wide spectrum of climate though being based in the Barossa Valley this collection favours the expression from a warm region. A standout to show the cooler expression is the Light and Finniss Fleurieu Peninsula Cabernet 2017.
