Folk-lore weighs heavily on the enjoyment of wine. Splendid old stone cellars from which emerge wines that have lain patiently for decades are at last ready to reveal velvet robes of remarkable colours, reflecting what awaits that will surely leave the taster in raptures.
Perhaps it happens though it is this thought that has led us away from a taste that is certain each vintage. This being the remarkable flavours of the recent vintage which are revealed when wines are made to capture what the fully ripened grapes offer.
This is nature’s reward and is shown by any variety, as long as the wine is not made in an extractive manner. We want the density of the fruit flavours without the need for decades to soften.
