Cabernet is the most popular global red variety though at the time Australians began to embrace table wines from the 1950s the plantings of Cabernet Sauvignon were miniscule. Table wine was a new taste and since it marries well with food its popularity kept growing with the embrace of new foods and new ways of cooking.
What variety a wine was made from only began to develop when wine makers and wine writers began to refer to the importance of the variety and old English terms like Claret and Burgundy and White Burgundy and Chablis were phased out.
Given the chance to revert to the 1950s I would call this wine as being in the style of Claret as being a blend from several regions it is more complex and rounded than some single vineyard cool climate Cabernets which can be shrill and obvious.
This is the way our winemaker likes his wines which is to let the mystery unfold as you taste.
